We also opened a bottle of Madeira – Miles Rainwater. I was making a Madeira sauce for some steaks. It was really good – I may try it on mushrooms, too.
Madeira Sauce
1/2 container Demi Glace base
1/2 cup water
1/4 cup red wine
2 Tablespoons Madeira
Heat to a boil and then reduce heat, keep warm till ready to use.
I looked up recipes to make demi glace from scratch, but it was more than I wanted to try at this time. You start with two types of stock and reduce them for many hours. I think I need to get better at making beef stocks before I can try a Demi Glace.
