Stuffed Tomato Salad

1 large tomato
4 thick slices cucumber, chopped into small pieces
large slice of yellow bell pepper chopped into small pieces
1 green onion chopped into small pieces
1 t chopped fresh cilantro
1 T fat free vinegarette dressing
juice and zest of one lime
Hollow out tomato, chop insides and add to other ingredients. Mix and spoon back into hollowed out tomato.
Serves 2
