Thai dinner with Weight Watchers points

I made another try at a Massaman Curry dish. Here is the result:
 
1 onion 
4 t olive oil
4 cloves of garlic  
1c sliced fresh mushrooms  
10 baby carrots  
1 c broccolli  
4 oz chicken breast cooked, chopped
3 oz  potato   
2c stock  
6 thai peppers  
8 stalks of cilantro  
1t cumin
1t ginger
.25 t tumeric
1 t  curry
Chop onion and garlic and saute in olive oil. Slice mushrooms and cut up chicken breast, add to onions. Add broccolli and stock.
In a separate pot, boil carrots and potatoes until tender. Add to onion pot. Add spices. Chop peppers and cilantro add to pot.
 
2 servings
5 Weight Watchers points per serving
served over rice (rice wasn’t counted in the points)
I made a peanut sauce to add to this – I found that it really didn’t add too much flavor and it added a lot of points. I used 2/3c light coconut milk and 4 tablespoons of peanut butter. It doubled the points, and really didn’t add much to the flavor – I will do without it in the future.
 
I might also cut the stock down to one cup.
