Lentils

1/2 cup lentils
2 c water
1 bay leaf
1 medium onion
1 head roasted garlic, peeled
4 t olive oil
2 oz leftover chicken breast
curry
salt
 
Put water, lentils, garlic and bay leaves in a pan, bring water to boil then simmer for about an hour.
Chop onions, saute in olive oil. Chop up chicken add to onions. When onions are translucent, add to lentils (while they are simmering.)
 
10 minutes before lentils are done, salt and curry to taste.
 
Weight Watchers Points – 6
 
I served it over brown rice.
