Mushroom Watercress salad

While searching for my copy of the beer cheese soup recipe, I found some other good recipes photocopied from somewhere and stuck in my recipe bag.
 
Mushrooms:
1/2 lb mushrooms
3 T lemon juice
1 t dried basil
1/2 t salt
1/8 t black pepper
Clean mushrooms and slice very thin. Place in a bowl. Mix lemon juice, basil, salt and pepper. Sprinkle on mushrooms and toss gently. Cover and refrigerate 1 hour.
 
dressing:
4 oz pimento
1/4 c oil and vinegar dressing
1 teaspoon mustard
Mix and set aside.
 
3 c watercress
 
Wash and pat dry watercress. Arrange watercress on plate. Top with mushrooms. Pour on dressing, toss and serve.
