Guac and Lentils – not together

I made another attempt at Guacamole. It is such a subjective dish.

3 Avacados
1/2 large onion
2 cloves garlic
Juice 1/2 lemon
salt
cayenne pepper
black pepper

Mixed everything in the food processor. The onion was really really strong, so I would recommend less onion. The avacados could have been really mild too.

Last night I made a lentil dish for dinner – it turned out pretty good.

1 cup lentils
2-1/2 c water
3 bay leaves
1/2 large onion
2 cloves garlic
4 slices of bacon
curry
salt

Put water, lentils and bay leaves in a pan, bring water to boil then simmer for about an hour.
Cook bacon until crispy set aside. Chop onions, press garlic, saute in leftover bacon drippings. When translucent, add to lentils (while they are simmering.)

10 minutes before lentils are done, add crumbled bacon, salt and curry to taste.

This turned out pretty good, we ate it for our main dish with rice and tortillas (I am sure there are better breads, maybe something more traditionally Indian, but tortillas were what I had on hand)
