Green Chili #4

1 large onion
3 cloves garlic
4 T butter
1 t cumin
1 t oregono
2 t cilnatro
6 anaheims
8 jalapenos
1 habenero
1/2 cup chopped tomatillos
chicken – 1 breast plus
2 c mashed potatoes
2 cup chicken broth
1 tomato diced
Bake chicken breast somehow ahead of time. I used leftovers from a spicy chicken breast and the breast meat from a roasted chicken.
Chop onion and garlic, saute in butter in a large pot with cumin cilantro and oregano until onion is clear. Chop peppers add to pot. Remove husks of tomatillos, wash and chop. Add to sauteing mixture in the pot. Cut up chicken and add to pot.
Sweat for 20 minutes.
Add tomato sauce, chicken broth and mashed potatoes. Salt and pepper to taste. Simmer for 45 minutes.
