Plum Tomato Pasta

12 pepper bacon slices -1" inch pieces
1 med onion chopped
two shakes red pepper flakes
1/2 t dried fennel seed
1 lb plum-style tomatoes (I use the black plums tomatoes from my yard)
1/2c tomato sauce (homemade stuff from other recipe)
1/2 c vodka
1 lb dried linguini
1 c heavy whipping cream

salt and pepper
fresh basil leaves

cook bacon
drain on paper towel
save 2 T of bacon drippings

crumble 1/3 of bacon for garnish – set aside (sample a little…)

Saute onion red pepper flakes and fennel seeds over low to medium until onion soft (in the bacon drippings)

Cut tomatoes to small pieces

stir in tomatoes, sauce and vodka and bacon pieces

simmer for 30 min

prepare pasta

stir cream into sauce – salt and pepper as needed

ladle sauce onto pasta

garnish with basil and sprinkle with bacon
