Cilantro-Cucumber Salsa stuffed Tomatoes

1/2 cucumber, peeled, halved, lengthwise, seeded, chopped into small pieces
1/2 yellow or orange bell pepper, seeded and cut into small pices
3 Tablespoons chopped shallot or red onion
1 Tablespoon chopped fresh cilantro (fresh coriander) plus sprigs for garnish
1 Tablespoon lime juice, plus slices for garnish
1-1/2 teaspoons olive oil
1 tablespoon hot pepper jelly
1 tablespoon water
6 medium to smaller tomatoes cut in half, hollowed
In a bowl, combine the cucumber, tomatoes, bell pepper, shallot, and chopped cilantro. Toss gently to mix.
In a small bowl, whisk together the lime juice, 1 teaspoon of the olive oil, the jelly, and water. Pour the lime mixture over the cucumber mixture and toss gently to mix and coat evenly.
Fill tomato halves with mixture. Sprinkle with salt, garnish with cilantro and lime slices.
