Green Chili – First Try

Miss Leslie’s Green Chili version 1
1 medium onion
2 garlic cloves
3 T butter
1 t cumin
1 t oregano
10 tomatillos
4 anaheim chilies
2 jalapeño peppers
2 chicken breasts
2 cups chicken broth
2 T tomato sauce
juice of 1 lime
salt
pepper
Roast and peal anaheims. Freeze if ahead of time.
Bake chicken breast somehow ahead of time.
Chop onion and garlic, saute in butter in a large pot with cumin and oregano until onion is clear. Chop anaheims, jalapeños add to pot. Remove husks of tomatillos, wash and chop. Add to sauteing mixture in the pot. Cut up chicken and add to pot.
Sweat mixture for 10 minutes.
Add tomato sauce, chicken broth and lime juice. Salt and pepper to taste. Simmer for 20 minutes.
Notes: used homemade chicken broth and tomato sauce. Would recommend browning meat and sweating mixture for 20 minutes. Simmer chili longer (30 min? 45 min?) Might try more anaheims or maybe anchos and less tomatillos.
